winter warmer time
Well it’s a little behind schedule (Baltimore Beer Week played havoc with our brewing schedule) but the day is upon us at last. Today I’m brewing William’s Winter Warmer. It looks like this is going to be the last time that I brew William’s Winter Warmer so I’m determined to make it a special one! William turns 8 years old this year so I thought that it was appropriate to aim for 8% a.b.v. which is no easy thing considering the amount of grain it takes to reach the required original gravity. The mash tun is full to bursting … we have to remove the sparge arm to get it all in, it really is just about brim full!!!

As with last year’s batch I will add a little spice to the boiling wort (cinnamon, nutmeg & cloves) although this will really be for a subtle background flourish … this beer is all about malt and the balance between the alcohol warmth and malt sweetness. It’s going to be a long day, that’s for sure.
