Mid-week update

The Scottish Ale fermentation is looking good. Gravity, as of 9am was 1.041 and temperature 77F. We’ll keep a close eye on the temperature now, if it creeps up any more we’ll have to use glycol system to cool it down a little. We have to be very careful doing this as we don’t want to cool the fermenting wort too much as this may stall the fermentation. Ideally I’d like the fermentation to have reached the desired attenuation on Friday, at which point it will be crash cooled and the excess yeast head removed, leaving a protective yeast “crust” on the surface. On Monday casks will be filled directly from the FV and the remaining beer transferred to a conditioning tank. Yesterday’s brew (Amber Ale) is, likewise off to a good start with a gravity of 1.036 and temperature of 75F. Tomorrow we’ll be brewing the Coventry Cream Ale and Friday’s brew will be an Ironman Pale Ale.

Well, back to the grind.
