The Bishop’s Indulgence (IV)
The first hop addition has just been made, Kent Goldings P90 pellets (4.5% alpha acid) and a second addition will be made later during the boil. Despite the high gravity of this brew I’m going to hop it at a fairly moderate rate because I don’t want the hop bitterness to detract from the cocoa and vanilla flavors that I’m hoping will be the main feature of this beer. Also the cocoa itself is likely to impart a certain amount of bitterness to the brew so I have to be mindful of that. I am hoping that the hop bitterness will strike a nice balance with the finishing sweetness of the malt and chocolate in this beer.
