The Bishop’s Progress
The Bishop’s Indulgence is fermenting nicely and is now down to a gravity of 1.040. It tastes great, no one thing dominating at the moment although tasting an active fermentation doesn’t say much about the final beer (unless there’s an unwanted flavor present!) I’m very excited about trying the finished beer as obviously when one creates a recipe one has certain preconceptions about the product so it’s always interesting to see if the final product is close to that initial concept. I’ll try it again after a couple of days in conditioning when it will at least be a good “blueprint” of the finished beer although a beer of this nature may undergo many subtle changes over time. I’ll keep it in conditioning for as long as I can before I have to get it on tap. One thing is for sure, I’ll keep a cask aside for at least 3 months to see how it develops.
