		<description>Pitching temperature for a the new pitch from White Labs is 74F, higher than normal, again to allow the yeast to adjust to its new environment. The wort may then be cooled to the required fermentation temperature. During the Winter months we pitch at about 72 and often need to use portable heaters to stop the fermentation from stalling. It gets very cold in the basement, so much so that it actually feels warm to enter the 38 F Walk-In! I&#039;ll post some updates with real time temperatures through the Winter. During the Summer months we tend to pitch @ 68F. Temperature of the fermenting wort may be reduced using glycol cooling should it exceed the upper limit (I tend to favor 74-76).</description>

What are your pitching temperatures and how cold is the fermentation room?  If these are trade secret questions I&#039;ll understand.  My favorite style of home brew is British bitters and I&#039;m still (after many years) trying to find the right fermentation temp.
