Mid-week round up
Another busy week this week. The Biere de Garde is in fermentation now. Yesterday the room was full of the distinctive aroma of Czech Saaz which today has given way to some interesting esters from the yeast metabolism. As you may know this brew is fermenting with a Belgian Ale yeast, graciously supplied by our friends at The Brewer’s Art, so will be very different to previous years’ brews. This is the first time in my 10 years at Oliver’s that I have brewed with a yeast other than Ringwood so it’s an interesting experiment for me. I can’t wait to see how it turns out. We’re shooting for about 6% a.b.v., with a deep red/brown color with a solid malt backbone. If all goes well it should be on tap in about 2 – 3 weeks.
Assistant brewer Justin is in the driving seat for today’s Ironman Pale Ale. It’s my birthday today so I’m having an easy day . Tomorrow will be back to business as usual and I’ll be brewing an Irish Red and moving batches of Dark Horse mild and Blonde Ale to conditioning as well as carbonating the Bishop’s Indulgence. Friday will see us putting through another Ironman as well as moving the Strongman out of FV and into a conditioning tank.
Next week I hope to brew another batch of Scottish Ale if the malt arrives in time. My Scottish Ale recipe requires Optic malt rather than the Halcyon which is my normal base malt. Although I generally prefer to do the seasonal brews as a “one and done” we’re down to our last couple of kegs of Scottish and I’m not ready to say goodbye to this one yet!
