O.K., I’ve just set taps, ie. the wort is now being transferred from the mash tun to the brew kettle. Clarity of the wort is excellent and the first runnings is about 1.090. As you’d expect from a stout, the wort is ink black in color.

The hop percolator has been filled with leaf Fuggles which are steeped in hot liquor to extract the essential oils. The hot wort will be run through the percolator as it passes to the heat exchangers and finally to the fermenting vessel, thus taking these dissolved hop compounds with it.

The brew burner is now on, heating the wort which should come to the boil shortly after the kettle is filled. The kettle is fired by a gas burner below and the wort is constantly circulated during the fill and boil. Because of the relatively high gravity of this brew we are going to double the normal boil time to 2 hours.
